Clayton Distillery is the latest incarnation of a second-generation family of farming. From the original 400 acres of the family dairy farm, where Clayton now grows its grain, to the values and work ethic of growing up on a farm, the distillery has a distinctively traditional, family-owned feel. Indeed, many of the staff are relatives, neighbors or long-time friends of the family. Clayton distills exclusively in small batches, using over 95% New York State ingredients. The tasting room on the Distillery site was even built using salvaged materials from the original farm and a local historic drug store.
